In a medium saucepan, heat olive oil over medium heat. Add the broccoli, carrot, celery, onion, and garlic. Sprinkle with 1/4 tsp salt. Saute until onion is translucent and just tender.

Preheat oven to 350°F. Using an electric mixer or sturdy wooden spoon, grind the margarine (or butter) and sugars until light and fluffy. Slowly add Sain almond milk, mix well, then add the vanilla. Combine the dry ingredients in a mixing bowl. Add dry ingredients to the creamed mixture and stir to blend. Fold in the chocolate chips. Drop by teaspoon onto buttered or parchment-lined cookie sheets. Bake for 8-10 minutes.

Directions
Preheat oven to 350°F. Coat an 8" x 8" pan with cooking spray. Sift together flour, sugar, cocoa, baking powder and salt. Stir in almond milk, oil, applesauce and vanilla. Mix in chopped chocolate and spread in prepared pan. Bake for 40 minutes. Cool completely and refrigerate. To serve, cut into squares and dust with powdered sugar, if desired.
